It’s been a while since my last Secret Recipe Club post. Did you think I left them? Of course not! With so much going on during the holidays, it was decided that December and January would form one BIG month. Weeks A & B would reveal the first two weeks of December, then we’d all enjoy the holidays and customary post holiday food coma for a month, the C & D would reveal. So here we are, rounding out the double month with Week D’s reveal. February will be back to our regularly scheduled programming. Promise.
This month I was assigned Table for Seven. Erin is an amazing cook who has challenged herself to provide healthy, not from the freezer meals for her and her family. Oh, I’m sorry, you don’t think that’s too difficult? Hmm, well did I mention her family includes her and her husband plus FIVE kids? That’s where the Table for Seven comes from. I hardly have the time to cook for just my husband and I sometimes, so Erin, for cooking and still having the energy to share with us…BRAVO!
I was torn what recipe to make. Generally I go for a main dish, but I recently started a new job and the mornings have been a little rough trying to get breakfast in. I found myself eying Erin’s muffin recipes and decided to go for the Apple Sugar Muffins. I skipped the cinnamon sugar topping and opted for cinnamon inside the muffins instead. Plus I swapped the melted butter for an oil/applesauce combo. The applesauce kicks a few calories plus adds that extra fruit punch. These muffins are basic, yet satisfying. They’re probably not going to win any awards for the prettiest muffin, but they’re just what you need running out the door the catch a train.
Apple Cinnamon Muffins (Adapted from Table for Seven) Makes 8
- 1 c whole wheat flour
- 1 c all-purpose flour
- 2 tsp cinnamon
- 1 tbsp baking powder
- 1/3 c sugar
- 1 c milk
- 1 egg
- 3 tbsp canola oil
- 1/4 c applesauce
- 1 apple, peeled and finely diced
Preheat oven to 400°F. Spray muffin tin with cooking spray. In a large mixing bowl, whisk flours, cinnamon, baking powder and sugar. Add milk, egg, canola oil and applesauce and mix until well combined. Fold in apples. Scoop batter into muffin tins, filling almost to the top. Bake 18-20 minutes until golden brown.

I’ve been on a bran muffin kick lately, trying different recipes because my husband is a bran muffin addict! I am thinking of doing either blueberries or apples next, and you are pointing me into a nice direction!
