Homemade Almond Milk
It blows my mind that I haven’t posted about my obsession for homemade almond milk yet. I went through my archives. I looked. Maybe it accidentally got deleted? I don’t know. I just can’t believe I haven’t shared.
SRC: Gluten-Free Coconut Pancakes for One
For this month’s Secret Recipe Club I was paired with Stephanie from Dessert Before Dinner. I find a bit cruel to be assigned to two sweet blogs (last week it was Annie’s Noms) just before and in the middle of my first Whole30. A true test of strength indeed! But none the less, as soon as I could again eat real foods, I couldn’t wait to indulge with one of Stephanie’s recipes.
Green Eggs, No Ham
Quite possibly my favorite part of doing a Whole30 is the mandatory encouraged consumption of avocados. Smashed up into guacamole, chopped up in a salad or scooped right from the shell, I’ll take them any way I can get them. Lately my go to breakfast has become scrambled or soft-boiled eggs, a piece of fruit and depending on what kind of day it is, a quarter or half sliced avocado. There have been days where avocado has appeared in all three meals–sliced for breakfast, guacamole on carnitas for lunch and diced in a salsa for dinner. Excessive, maybe, but I don’t ever regret it.
Whole30 Friendly Feel Better Soup
I tend to get sick pretty often. In our last apartment I experienced sinus infection after sinus infection. Literally one would end, I would be well for a week and the cycle would start up all over again. I blame it on the cleanliness of the building because after moving I felt much better. But still, it’s not unusual for me to get a cold, sinus infection or worse, bronchitis every month or so. My immune system has always been a bit tricky.
When I went gluten-free, one of my biggest concerns was what to do when I got sick to make me feel better. Like clockwork for years, my feel better foods have been black tea with honey, toast with jam and most importantly–a couple of quarts of wonton soup. As soon as I felt the itch of a sore throat coming it became Chinese takeout night and my husband would order his favorites while I stocked up on wonton soup to get me through the next couple of days. I could live without the toast, but that warming soup? What would my gluten-free fix be?
