Lately dinner has been a rush. Work is wonderful but stressful so late nights lead to quick fixes like burgers or mac & cheese or worse…takeout. Needless to say, I haven’t been cooking as much as I’d like. Which also accounts for the long periods of silence in between posts. I just haven’t been able to experiment with creating new recipes lately.
While dinner is a struggle, breakfast is something I’ve come to love and need. I used to be the person who never ate breakfast, went to work, maybe grabbed a cup of coffee on the way, and then didn’t put anything of substance in my stomach until about 1:30 or 2pm. Yet somehow when I started forcing myself to eat breakfast a few years ago, I became addicted and now need it to survive. On the occasional day I leave my apartment without food in my belly, I feel nauseous and dizzy on the subway ride in, until I’m able to finally fill that void. To avoid the drab bowl of cereal, I try to prep some foods on Sunday night to carry me through the week’s mornings.
I’ve always had a thing for lemon poppy seed muffins. Why I’ve never made them, I’m not sure. The extra stress of shopping for poppy seeds? Who knows. So when I was assigned to Traci’s Burnt Apple blog, through the Secret Recipe Club, I knew exactly what I would be making. I absolutely love Traci’s honesty. In her introduction, she admits to making a muffin so hard her husband tossed it through the wall, literally. She couldn’t cook. Yet her determination and growing family, forced her to take on the challenge. Burnt Apple is filled with healthy recipes, but unless you read the recipe, you’d never know. Everything just looks so tasty!
It’s been a while since my last Secret Recipe Club post. Did you think I left them? Of course not! With so much going on during the holidays, it was decided that December and January would form one BIG month. Weeks A & B would reveal the first two weeks of December, then we’d all enjoy the holidays and customary post holiday food coma for a month, the C & D would reveal. So here we are, rounding out the double month with Week D’s reveal. February will be back to our regularly scheduled programming. Promise.
This month I was assigned Table for Seven. Erin is an amazing cook who has challenged herself to provide healthy, not from the freezer meals for her and her family. Oh, I’m sorry, you don’t think that’s too difficult? Hmm, well did I mention her family includes her and her husband plus FIVE kids? That’s where the Table for Seven comes from. I hardly have the time to cook for just my husband and I sometimes, so Erin, for cooking and still having the energy to share with us…BRAVO!
For those of you who don’t know me very well, I’m a procrastinator. A pretty big one. I very much enjoy being part of Secret Recipe Club, though I almost find the four week window to explore your assigned blog, pick a recipe, make it and write to be too much time. This month it certainly go the best of me. Healthy-Delicious was my assigned blog for this month. I’m a huge fan of Lauren’s blog and have been since I was introduced to it via SRC a few months back. After learning my assignment I quickly went her site, fantasizing about all the awesome recipes I could try. And then I stopped. Moving got in the way. First my old kitchen was too boxed up to make anything. Then my new kitchen became so filled I couldn’t even get inside. Time was quickly ticking away. I managed to find my knives, a few pans and set to work to see what I could come up with. Lauren’s Chorizo Quesadillas with Chipotle Cream was listed under One Pan and Quick Weekday Meals. I can truly attest to you that even with only a quarter of a kitchen this recipe is possible and delicious.
This month I was assigned to Fried Ice and Donut Holes, a blog that I discovered last month when I was first invited to join the Secret Recipe Club. Secretly I was hoping it was a blog I’d be assigned in the near future. Why? Well, first off, the fabulous author of Fried Ice and Donut Holes is Melissa as well. So instantly I knew I’d like her. With all Melissa’s I find good food and creativity always follow and this was no exception. So many great recipes to choose from! Right away, I zeroed in on her Chicken Tikka Masala recipe, a dish that I’ve struggled with a lot in the past. At this point I’ve probably made at least half a dozen variations from super easy to super challenging, from stove top to crockpot, but nothing has tasted just right. My husband had been ignoring my craving for Indian take out for the last few weeks, so I figured if I made it, he would be forced to enjoy.
