I know it’s after Christmas, and perhaps much of your gift giving is complete. However, homemade gifts are not for holidays alone. I waited a while to post this recipe (along with the soon to come infused brandy recipe) because I wasn’t about to give away gift ideas to my Christmas recipients. By now you should be very familiar with Smitten Kitchen and her glorious Irish Car Bomb Cupcakes. If not, you may be living under a rock or are not seeking enough creative ways to get your daily servings of booze. Both are unacceptable. I was first introduced to Smitten Kitchen and her boozy cupcakes at a friend’s St Patrick’s Day party. I’ve never done an Irish Car Bomb. After dropping in a shot of Jameson and Bailey’s, you need to quickly chug the beer before the Irish Cream curdles. Considering my idea of downing a beer still takes a good half hour, while others have already moved onto a second round, I don’t think the concept would work too well. Nevertheless, when my friend added cupcake to the end of the description, I was already in love.
One of the first things I think of with Christmas (besides cookies and booze) is fruitcake. I never really understood the symbolism of it and am proud to say I’ve never tried the stuff. But I do remember hearing threats of people re-gifting fruitcakes over and over and rumors that the stuff could last for decades, if wrapped properly. It does seem festive, with it’s red and green “fruits” and I couldn’t imagine writing a 12 Days of Christmas series without it. I planned on
spending hours researching scouring the internet checking Wikipedia to learn about its origins, until I came across this article on the Huffington Post. While I could research and write for days, I don’t think I could ever come close to their thoughts as to why fruit cake is the most hated feared Christmas dessert cake food. Just go ahead and read it.
