About six months ago I bought my first jar of coconut oil. It was about a year coming. I was dying to make something with it but never had a recipe in mind so held off buying some for a long time for fear of wasting it. After my first purchase of coconut oil, it continued to sit in the pantry for another several months, still no ideas flowing through my head.
Finally it was time to open the stuff. Baby steps. I cooked up some sautéed chicken with it. The second big step was granola. Replacing my standard canola oil with coconut oil in my simple granola recipe made the flavors burst. I was getting hooked. What happened if I baked with it? The Secret Recipe Club as always gave me a great base to experiment with.
A few weeks ago a Smitten Kitchen’s profound question crossed my Facebook feed. “Is there anything that isn’t better with chocolate?” I assume it was rhetorical. Who could answer no? Her recipe that followed for Double Chocolate had me immediately thinking everything is better with chocolate and necessary at this exact moment. I was on my way home from a weekend Boston and while I had no plans to do anything but order a pizza and binge in front of the couch, I instantly knew it had become a baking night.
The sad fate of a forgotten banana in our apartment
Yes, I realize what you’re thinking. Bananas don’t grow in Brooklyn. So occasionally I slip a bit. I’m not perfect. See I ADMIT it! Bananas are just perfect little breakfast/snack foods. Something I can grab as I’m running late to work and eat on my walk to the subway. So occasionally I get the craving for a banana and buy a bunch at the Park Slope Food Coop. I prefer my bananas firm and a little on the unripe side, so usually go for the ones that are still a bit green on the outside. I make sure to only purchase 4 or 5 so we eat them in time. But as you can see, sometimes my best intentions fail.
The last day of the month is very quickly becoming my favorite day of the month. Well, maybe only second to the day I actually receive my Foodie Penpal package. Plus there’s the day I get my assignment… It’s a tough call. For those of you just tuning in, Foodie Penpals is the brainchild of Lindsay over at The Lean Green Bean. Every month you send a box of food to an assigned penpal and receive a box in return. How this concept only started a little over a year ago is insanity to me. I mean seriously, who wouldn’t want to send and receive awesome foodie goodies every month?
